Healthy banana nut bread recipe-Whole food goodness!

1 3/4 whole wheat flour

3 ripe bananas

1/4 cup of milk (I used almond)

2 eggs

1/2 cup of oil-I used olive oil

1/3 cup of honey

1 tsp of vanilla extract

1/2 tsp cinnamon

1 tsp baking soda

A pinch of salt (optional)

1/3 cup of crushed almonds

1/4 or less cup of flaked almonds (For topping)


Preheat the oven at 325 F

In a large bowl, mash bananas very well and add the wet ingredients which is milk, eggs, oil, honey and vanilla. Mix together (I used a manual hand mixer) so that it is smooth with minimal lumps.

Add the flour, baking soda, cinnamon and a pinch of salt and mix smooth. Add the crushed almond and mix again. Grease bread pan and pour the mixture into bread pan. Place the almond flakes on top and bake for 50-55 minutes (until a toothpick comes out clean). Allow it to cool and enjoy!

Whole grain wheat was used in place of regular white flour because it is a complex carb that is rich in fiber and antioxidants. Coconut oil is also a healthy oil that contains saturated fat which helps to stabilize cell membranes and also contains antimicrobial properties. This bread also contains cinnamon which is a healthy spice.
