Try this super easy vegetable egg bake that is delicious and loaded with nutrients from power vegetables like broccoli and cauliflower.

Looking at the ingredients for this vegetable bake, you can get an insight into the quality of food you are about to feed your body. Broccoli is low in carbs and therefore reduces the risk of obesity, type 2 diabetes and heart related issues like High Blood Pressure. It is incredibly rich in vitamin C and K which helps to strengthen the immune system and helps with blood clotting and bone metabolism. Broccoli also contains folate which research shows, decreases the risk of breast cancer.
Cauliflower is a cruciferous vegetable just like broccoli. Low in carbs and high in vitamin C and B. Both vegetables contain a good amount of fiber which makes this food very filling.
Eggs are high in protein and study shows that a normal adult can eat up to 3 eggs a day. Cherry tomato is also rich in vitamin C and A. These foods also contain minerals that play different roles for proper functioning of the body. They also contain antioxidants that fight the formation of free radicals that causes cancer according to research. So what you eat can either make your body stronger or weaker. Vegetable Egg Bake Recipe
1 cup of cauliflower
1 cup of broccoli
2 sliced green pepper (1 if you do not want it hot or spicy)
6 tomato cherries
1/2 Medium sized Onion
Salt and seasoning for taste (I used 1/4 cube of Maggi seasoning). You can use a seasoning of your choice.
How To Make
Step 1. The first thing to do when about to bake is to preheat the oven. Same goes for this vegetable egg bake. Preheat oven at 340 F.
Step 2. Just like normal ways of preparing vegetables for cooking, wash all the vegetables required. Cut the broccoli and cauliflower into smaller sizes to get 1 cup each. Slice or chop the onions. Cut cherry tomatoes into halves and cut the green chili in small pieces.
Step 3. Break the eggs into a bowl and beat. Pour all the vegetables you have except the tomato cherries into bowl. Add a pinch or 2 of salt and seasoning. Beat all together into a good mix. Grease your oven pan or glass with butter to so the bake can detach from the pan when cooked.
Step 4. Pour the vegetable egg mix into the bake pan, place the tomatoes at the top and place in the oven. Allow to cook for 30 minutes.
Take it out of the oven and place in a plate and serve.
